This class is designed for beginners and home cooks who want to move beyond recipes and learn how dough should feel. You’ll learn how to mix, rest, and roll semolina pasta until it’s smooth, supple, and easy to work with - and how to troubleshoot common issues like stickiness, tearing, and spring-back.
Rather than rushing, we’ll focus on building confidence and understanding the dough whilst learning various pasta shapes derived from a semolina dough.
