Join me for a hands-on pasta-making workshop where we’ll craft Scarpinocc, a beautifully folded stuffed pasta from the Lombardy region of Italy. Traditionally filled with a simple mix of cheese and breadcrumbs, we’ll elevate this dish with a rich, velvety pumpkin filling, perfectly balanced with nutty brown butter and crispy sage. You’ll learn the techniques to roll, shape, and fill Scarpinocc by hand, along with tips for achieving the perfect brown butter sauce. Whether you’re new to filled pasta or looking to refine your skills, this class is all about celebrating seasonal flavours and mastering the art of handmade pasta.
