Summer Heirloom Tomato Salad with Peaches, Burrata and Rose Balsamic

This heirloom tomato salad with burrata is the perfect embodiment of summer on a plate. Vibrant, juicy heirloom tomatoes are paired with juicy peaches and the creamy richness of burrata, which adds a luxurious, melt-in-your-mouth texture.
The salads biggest hero is the delicate rose balsamic vinaigrette, which adds a layer of subtle sweetness and tangy depth, enhancing the natural freshness of the tomatoes.
The dressing ties everything together beautifully, making each bite a harmonious celebration of the season’s finest ingredients.

Ingredients
1 punnet heirloom cherry tomatoes
2-3 large herloom tomatoes
1/4 red onion, sliced
handful of fresh basil leaves
1 burrata
EVOO
Rose Balsamic
Salt and pepper
There is no method to the madness with this salad - I like to keep it rustic and not be too particular when I'm cutting the tomatoes. I prefer the texture of chunkier cuts, this really a personal preference and feel free to define how you like it.
Start by washing the tomatoes - pat dry. Cut the cherry tomatoes in halves, or sliced into thirds, depending on their sizes. With the larger heirlooms, I like to use a variety of colours if I can source them, and cut them into 2-3cm chunks on the bias. Transfer to a mixing bowl. Slice the red onion and add to the tomatoes. 
Now, using the basic principle of a vinaigrette - that is, 3 parts oil to 1 part vinegar - dress the salad to your taste. I prefer to take the balsamic a little further as I love the tangy notes, and this rose balsamic in particular has a gorgeous sweet note that I really want to shine in this salad. If of course you don't have a rose balsamic, then a red wine vinegar will also be lovely!
Season well, then toss the salad with your clean hands - the tomatoes can break down slightly allowing their juices to add to the vinaigrette. Add the basil last, gently tossing as not to bruise the leaves, and plate up. Gently place the burrata in the middle of the platter, and serve immediately. The perfect summer salad!
